The most important factor in preserving frozen food and its processing and storing is absolute temperature control.

This has to start from the source, which is from the ocean or the farm. Icing the raw material while transportation, recieving the raw material at the processing plant. Further maintain temperature in the processing area, chill room & proper storage inside the cold store.
